What's Cookin'? Main Dish
Sloppy Joe's-
If you and your family love Sloppy Joe's DO NOT buy the canned stuff. This homemade version is stupid easy and just as quick. Feel free to add/take away from the recipe but this is how I make my Sloppy Joe's.
1 lb ground beef
1/2 of a small onion (or 1/2 C) chopped yellow onion
1 can of tomato paste
1 cup water
1 Tablespoon chili powder
1 tsp paprika (although I didn't have any paprika last time I made it and I couldn't tell a difference)
1 tsp cumin
1 tsp garlic powder
1 tsp white distilled vinegar
1-2 Tablespoons brown sugar (depending on how sweet you want your mixture)
1 tsp dried oregano
1/2 tsp salt
1/2 tsp black pepper
Brown the meat with the onion. Once meat is browned drain the fat. Mix in the tomato paste, water, vinegar and all the spices.
Continue to heat for 5-10 minutes until mixture is thick and stew like.
Told you it was simple!

You deserve to make national news
For most of us on Saturday, November 24th, 2012 we were sitting around with our families enjoying each other's company over the Thanksgiving weekend. Your crazy uncle was slicing up leftover turkey for his sandwich and you were 60 stories deep with your Grandma telling you all about her weekly knitting class.
Do you know what Ursula Ebbert was doing that day? She was receiving news that her husband, Kevin (32), from California and a US Navy Seal who was currently serving his second tour in Afghanistan, had died from hostile fire. He had been shot in the line of duty. Her husband that she married on New Years Eve in 2011 was no longer alive. They had been married 11 months and were just starting their life together and now she was left without a husband. Why didn't he make national news?
What about on Christmas Eve? We were all finishing up last minute wrapping, watching Christmas specials on TV, and spending the day with the ones we love. Enrique Mondragon from Texas (23) was married to Katie and had a sweet 2 year old little girl, Beverly. Enrique was also killed by hostile fire. Beverly lost her daddy on Christmas Eve, why didn't he make national news?
March 27, 2013, Michael Cable (26) from Kentucky and in the US Army was part of the 1st Brigade combat team. He was playing soccer with a group of children when the attacker came up from behind and stabbed him in the neck. Why didn't he make national news?
April 6, 2013 Deflin Santo's Jr (24) was killed in Afghanistan due to a car bomb. Why didn't he make national news?
THESE are the pictures that need to be invading the National news coverage. THESE are the pictures that people need to post on Face book, Twitter and any other social media site. THESE are the pictures that need to be all over CNN or Fox News.
Taking nothing away from any other tragedy that we face, bombings, school shootings, movie theatre massacres but in MY opinion our troops do not get enough gratitude. Something horrible happens to our nation and we rally together and pray for Boston, we pray for the children involved in the school shootings, a 'famous' celebrity dies and we hear about it on the top news story for 4 weeks. These precious men above lost their life. Lost their life for us. They had moms and dads at home awaiting their safe return. They had wives and children at home. These are just 4 men that I chose but 2,200 since 2001, of our United States soldiers have lost their life. They can't get 2 seconds of news coverage? They don't deserve a special statement from the President? It irritates and upsets me. They deserve it!
Let me be clear, I do think that the horrific events that happen to us as a Nation deserves to make news, I do. I to pray for the city, state and families affected by any tragedy. Also, with anything involving mother nature and floods, earthquakes or tornado's. All I am saying is lets not continue to report the exact same thing and show videos/pictures over and over for the affected to have to see and continue to hear about it for weeks and weeks on end. All while, no one ever hears about a solider that lost his/her life defending my/your freedom.

What's Cookin? Breakfast.
Pumpkin Apple Muffins: I found this recipe off Pinterest.

The girls and I made them on Saturday morning and even though mine didn't turn out quite as pretty as the recipe, they were still delicious and moist. Obviously they would be great to make in the fall or you could be cool like me and make them randomly on a spring morning in April. Whatever season you decide to make them, you will love them. Pinterest recipe for the win!

The original recipe makes 18 but we cut that in half and the recipe made 10 muffins. Also, the original recipe did not specify to peel the apple first. Biting into apple peel was not appealing to me so I decided to peel my apple before I chopped it up.
The cinnamon/sugar dusting on top of the muffin added a good sweetness and crunch.

Happy Birthday Joe
Happy Birthday to the love of my life.
Last year on your 35th we tried to make it extra special for you knowing that you wouldn't be home this year to celebrate your 36th with us. We miss you and hope you have a happy birthday!
Out of your 36 years on this earth I have known you for 11 of them. You were 25 when we met and I am grateful that you fought hard for me. You, being the mature one at 25 knew what you wanted in life and you knew that you wanted me to be in your future. I am honored to be in your future then and now. A lot has happened in these eleven years we have known each other. Soon we will be celebrating our 8th wedding anniversary and I honestly cannot wait to spend the rest of my days with you.
Today marks the day we are officially finished celebrating holidays/birthdays without you. The next holiday will be spent together.
Happy Birthday to the most wonderful football loving, boxed chocolate cake eating, Ribeye steak devouring, crown and coke savoring love of my life. You love everything about me and love me from the inside out. I love you more...

I can officially say "HE'S COMING HOME NEXT MONTH"
Can you believe it?
Remember being a senior in high school and returning back after spring break? Remember the little thing everyone called Senioritis? Its the condition known as just wanting to get out of school already, not wanting to do much work and experiencing anxiety for the next 6 weeks to pass quick so we could graduate and just get out of school.
Moms, remember your last month of pregnancy? Those last four weeks drug by and seemed to never want to end. You just wanted the baby to get here already so you could finally see your baby, touch your baby, smell your baby, kiss your baby.
Well, that's where I am with this deployment. I am ready to see him, feel him, kiss him and have him under our roof. I am ready for my family of four to be a family of four again. I am done waiting but understand there is nothing I can do about waiting. I am picturing the moment he walks into his home and what will be going through his mind. I know what I will be feeling. Relief. I will finally be able to exhale.
